This delicious cauliflower recipe takes about 50 minutes to prepare with an active time of only 20 minutes. This recipe makes 8 servings.
Ingredients:
- 170g Fresh cauliflower
- 170g Fresh broccoli
- 2 tbsp Butter
- 2 1/2 tbsp All-purpose flour
- 2 1/2 cups Milk
- 230g Cheddar cheese, shredded
- 1 tsp English mustard
- Cayenne pepper to taste
- Salt and Pepper to taste
Method:
- Preheat the oven to 220ºC (425ºF).
- Fill a pot with water and place cauliflower and broccoli inside. Boil for about 10 minutes until tender. (You are also welcome to steam the veg. Just be careful that you do not overdo it, as the veg might become pale and limp.)
- In a separate saucepan, melt the butter and stir in the flour. If the butter starts to bubble take saucepan off heat. Stir in flour and gradually start adding the milk. Rather use a whisk as a spoon will make your sauce lumpy.
- When the mixture has becomes nice and thick, whisk in the english mustard, cayenne pepper, salt and pepper.
- Whisk. Your sauce should at no point start to boil. If it does remove from heat and turn heat down.
- Sprinkle about 2/3 of your cheese into the sauce and stir. Remove from heat.
- Place your broccoli and cauliflower into an overproof dish and top with the sauce.
- Bake in the oven for 20 minutes.
- Remove dish from the oven top with remaining cheese and bake for a further 10 minutes until nice an brown.
- Serve and enjoy!
NOTE: You can also make this a pasta dish by halving the veg and adding cooked macaroni in its place. You are also welcome to adjust the amount of cheese used in this recipe.
