[Recipe] Accordion Potatoes with Parsley & Thyme

This delicious recipe serves 8 and is easy to make. Use these accordion potatoes as a side dish with your favourite roast.

Ingredients:

  • 8 large Red potatoes
  • 2 tbsp Extra virgin olive oil
  • ½ tsp Salt
  • ¼ tsp ground Black pepper
  • 1 tbsp fresh Parsley, chopped
  • 1 tsp fresh Thyme, chopped

Method:

  1. Preheat the oven to 220C (450F).
  2. Slice your potatoes, 3/4 of the way, into thin slices. Be careful not to cut right through.
  3. Place potatoes on a microwave safe dish, cover with wax paper and microwave for 12-15 minutes. The potatoes are ready when you can easily pierce it with your knife.
  4. Place potatoes on baking pan.
  5. Lightly, drizzle the olive oil in between the slices.
  6. Sprinkle with salt and pepper.
  7. Place in oven and roast for 25 minutes.
  8. Transfer the potatoes to a serving dish and sprinkle with fresh herbs.
  9. Serve and enjoy.
