This delicious recipe serves 8 and is easy to make. Use these accordion potatoes as a side dish with your favourite roast.
Ingredients:
- 8 large Red potatoes
- 2 tbsp Extra virgin olive oil
- ½ tsp Salt
- ¼ tsp ground Black pepper
- 1 tbsp fresh Parsley, chopped
- 1 tsp fresh Thyme, chopped
Method:
- Preheat the oven to 220C (450F).
- Slice your potatoes, 3/4 of the way, into thin slices. Be careful not to cut right through.
- Place potatoes on a microwave safe dish, cover with wax paper and microwave for 12-15 minutes. The potatoes are ready when you can easily pierce it with your knife.
- Place potatoes on baking pan.
- Lightly, drizzle the olive oil in between the slices.
- Sprinkle with salt and pepper.
- Place in oven and roast for 25 minutes.
- Transfer the potatoes to a serving dish and sprinkle with fresh herbs.
- Serve and enjoy.
