[Recipe] Dairy free custard freeze

Have you ever wondered around the house feeling like having something sweet but not sure what to make? Well here is the perfect recipe for you and believe it or not but this recipe can be made in the microwave within minutes!

Ingredients:

  • 1 1/2 tbsp Corn flour
  • 1 1/2 cups Soy milk
  • 3 Egg yolks
  • 2 tbsp Caster sugar
  • 1/3 cup Pecan nuts
  • 1 1/2 tbsp Pure maple syrup

Method:

  1. In a microwave safe bowl, combine the cornflour and 1/4 cup of milk. Stir until smooth, then add the remainder of the milk.
  2. Microwave on a medium heat for 1 – 1 1/2 minutes or until mixture is hot. Please note mixture should not start to boil.
  3. Meanwhile whisk egg yolks and sugar in another microwave safe bowl.
  4. Pour hot milk mixture over the egg mixture and combine.
  5. Place in the microwave for about 1 1/2 minutes, then stir.
  6. Place in the microwave again for another 1 1/2 minutes or until mixture is nice an thick.
  7. Pour mixture into small ramekins and cover with cling film. Freeze for 2-3 hours until frozen.
  8. When frozen turn our custards on a plate and top with pecans and maple syrup. Enjoy!
