This delicious recipe is diabetic-friendly and lower in calories. It takes about 20 minutes to prepare. This recipe makes about 16 potato cakes and contains about 80 calories each.
Ingredients:
- 500g Mashed potatoes
- Half of 1 medium Brown onion
- 1/2 tsp Pepper
- 1 cup Matzo meal
- Cooking spray
Method:
- In a large mixing bowl combine the mashed potatoes, onion, pepper and Matzo meal. Mix with a spoon until fully combined.
- Divide the mixture into 16 equal round balls. Lightly press down to flatten them into 8cm round disks.
- Heat a pan on a medium to high heat.
- Coat the cakes on both sides with cooking spray and place in pan.
- Reduce the heat to medium and cook for 1-3 minutes on each side. They should be nice and golden brown.
- Place on cooling rack and cool.
- Serve and enjoy!
