This delightful recipe serves 4. It is easy to make and is high in Omega 3. Omega 3 is vital to promote better eyesight.
Ingredients:
- Cooking spray
- Extra-virgin olive oil
- 1 Onion, finely chopped
- 1 Celery stalk, finely diced
- 2 tbsp Parsley, freshly chopped
- 500g Canned salmon, drained
- 1 large egg, lightly beaten
- 1 1/2 tsp Dijon mustard
- 1 3/4 cups Breadcrumbs
- 1/2 tsp Pepper, freshly ground
- Sweet chilli sauce, Creamy dill sauce, Tartar Sauce
- 1 lemon, cut into wedges
Method:
- Preheat the oven to 220°C or 450°F.
- Evenly coat a baking pan with cooking spray
- In a large frying pan, heat Olive Oil and add the onion and celery. Cook until soft and slightly brown.
- Stir in the parsley and remove from heat.
- Gently flake the salmon with a fork. This will help you remove the bones easier. All bones and skin should be removed. Place salmon in a medium mixing bowl.
- Add mustard and egg, mix until fully combined.
- Then add the onion mixture, bread crumbs and season with pepper. Mix until combined.
- Roll the salmon mixture into 8 balls and gently flatten them to make your patties.
- In a large frying pan, add some olive oil and over a medium heat cook the patties for 2-3 minutes.
- Remove from pan and place on prepared baking pan. Bake for 15-20 minutes until golden brown and heated through.
- Remove from baking pan and serve salmon cakes with any sauce you prefer and lemon wedges.
