This delicious recipe is easy to prepare and prepared at work if you have a microwave. This recipe makes 4 snack size servings.
Ingredients:
- ¼ Cucumber, halved and sliced
- ¼ Lettuce, shredded
- 2 Spring onion, sliced
- Handful mint leaves, torn
- 4 plain small naan bread
- 140g pack cooked chicken tikka pieces
- Natural yogurt to serve
Method:
- In a large mixing bowl toss together the cucumber, lettuce, spring onion and mint leaves.
- Place the naan bread in the microwave and heat on a medium heat for 1 minute.
- Heat the tikka chicken.
- Spilt the naan bread in 2 and fill with the salad and a few tikka pieces.
- When ready to eat, add a spoonful of yogurt.
- Enjoy.
Note: If you are preparing them before hand. Add everything except for the yogurt. This you can add just before eating.
