Creamy Chicken Pita

This delicious pita works great as a packed lunch. Each pita consists of 446 calories.

Ingredients:

  • 1 kg Chicken breasts
  • 1/2 cup Mayonnaise
  • 1/2 cup Plain Greek yogurt
  • 1 tbsp Lemon juice, preferably fresh
  • 1 tbsp White wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp Honey
  • 1/2 tsp Salt
  • 1/2 tsp Ground black pepper
  • 1/3 cup Celery, chopped
  • 1/3 cup Sweetened dried cranberries
  • 7 tbsp Smoked almonds, chopped coarsely
  • 6 cups Mixed salad greens

Method:

  1. Fill a large cast-iron pot 2/3 with water and bring to the boil.
  2. Wrap the chicken breasts tightly in cling film, seal and place in boiling water. Cover and boil the chicken for about 20 minutes or until a thermostat shows 165°
  3. Remove the chicken from the pot and remove cling film. Shred the chicken and place in bowl to cool in the refrigerator for about 30 minutes.
  4. In a separate mixing bowl combine the mayonaise, greek yogurt, lemon juice, vinegar, mustard, honey, salt and black pepper. Whisk ingredients until fully combined.
  5. Then, add the chicken, celery, cranberries and almonds and mix well.
  6. When ready to serve toss your salad greens through your chicken mixture and scoop equal amounts into your pitas.

Note: This recipe can also be used as a salad.
