This delicious pita works great as a packed lunch. Each pita consists of 446 calories.
Ingredients:
- 1 kg Chicken breasts
- 1/2 cup Mayonnaise
- 1/2 cup Plain Greek yogurt
- 1 tbsp Lemon juice, preferably fresh
- 1 tbsp White wine vinegar
- 1 tbsp Dijon mustard
- 1 tsp Honey
- 1/2 tsp Salt
- 1/2 tsp Ground black pepper
- 1/3 cup Celery, chopped
- 1/3 cup Sweetened dried cranberries
- 7 tbsp Smoked almonds, chopped coarsely
- 6 cups Mixed salad greens
Method:
- Fill a large cast-iron pot 2/3 with water and bring to the boil.
- Wrap the chicken breasts tightly in cling film, seal and place in boiling water. Cover and boil the chicken for about 20 minutes or until a thermostat shows 165°
- Remove the chicken from the pot and remove cling film. Shred the chicken and place in bowl to cool in the refrigerator for about 30 minutes.
- In a separate mixing bowl combine the mayonaise, greek yogurt, lemon juice, vinegar, mustard, honey, salt and black pepper. Whisk ingredients until fully combined.
- Then, add the chicken, celery, cranberries and almonds and mix well.
- When ready to serve toss your salad greens through your chicken mixture and scoop equal amounts into your pitas.
Note: This recipe can also be used as a salad.
