[Recipe]  Delicious Diabetic-Friendly Apple Slaw

We all love a light and sweet slaw in summer. Serve this delicious slaw as a side dish with a rack of lamb, beef fillets or even a roast chicken. This recipe yields 6 large servings and contains about 55 calories per serving.

Ingredients:

  • 1/3 cup Cider vinegar
  • 2 tsp Olive oil
  • 1 tsp Sweetener, calorie-free
  • 1 tsp Dijon mustard
  • 1/2 tsp Caraway seeds (persian cumin seeds)
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 7 cups Red cabbage,shredded
  • 1 1/2 cups Apple, diced

Method:

  1. In a mixing bowl combine the vinegar, olive oil, sweetener, mustard, seeds, salt and pepper. Whisk until fully combined.
  2. Add the cabbage and apple and toss until fully coated with the delicious sauce.
  3. Cover bowl with cling film and cool in the fridge. Toss occasionally.
  4. Serve and enjoy!
