We all love a light and sweet slaw in summer. Serve this delicious slaw as a side dish with a rack of lamb, beef fillets or even a roast chicken. This recipe yields 6 large servings and contains about 55 calories per serving.
Ingredients:
- 1/3 cup Cider vinegar
- 2 tsp Olive oil
- 1 tsp Sweetener, calorie-free
- 1 tsp Dijon mustard
- 1/2 tsp Caraway seeds (persian cumin seeds)
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 7 cups Red cabbage,shredded
- 1 1/2 cups Apple, diced
Method:
- In a mixing bowl combine the vinegar, olive oil, sweetener, mustard, seeds, salt and pepper. Whisk until fully combined.
- Add the cabbage and apple and toss until fully coated with the delicious sauce.
- Cover bowl with cling film and cool in the fridge. Toss occasionally.
- Serve and enjoy!
