[Recipe] Fresh Salmon with Melon Salsa

This delicious recipe is high in omega 3, DHA and EPA. These nutrients will help decrease inflammation in the eyes and reduce chances of developing cataracts and dry eye syndrome. This recipe serves 4.

Ingredients:

  • 4 Salmon fillets
  • 1 tbsp Olive oil
  • Salt and Pepper
  • 1 cup Melon, cut into cubes
  • 1/2 Red pepper, cut into cubes
  • 1 Green onion, chopped finely
  • 1 tbsp Fresh cilantro, chopped
  • Salt and Pepper
  • 1 Lime, zest & juice
  • 1 tbsp Olive oil

Method:

  1. Preheat the oven to 200 degrees Celsius.
  2. Prepare a baking pan with foil. Place the salmon onto the foil. Lightly brush with olive oil and season with salt and pepper.
  3. Place in the oven and bake for about 5-10 minutes, until cooked through and golden brown.
  4. Prepare your salsa by mixing together the melon, green onion, red pepper, cilantro and season with salt and pepper.
  5. In a separate mixing bowl combine the olive oil, lemon zest and lemon juice. Whisk until fully combined.
  6. Pour the lime juice mixture over your salsa and combine.
  7. Serve your salmon with the salsa on top.
  8. Enjoy!

NOTE: If you do not like melons you can also substitute the melon with peaches or papaya.
