This recipe will work great this summer and even in the up coming winter. Please note that you will need an ice cream maker to make this recipe. This recipe yields about 4 servings.
Ingredients:
- Ice cream maker
- 6 cups Raspberries, fresh
- 1/4 cup Grape juice
- 1 cup Superfine sugar
- 1 1/2 cups Buttermilk
- 1/4 cup Double cream
- Salt and freshly cracked pepper
Method:
- Add the raspberries, grape juice and sugar to a food processor and puree until smooth.
- Pour mixture through a sieve into a bowl. Discard the left overs in the sieve.
- Pour the buttermilk, cream and a pinch of salt into your raspberry mixture and stir until fully combined.
- Place mixture in fridge for about 1 hour until cold.
- Transfer mixture to an ice cream maker and freeze according to the manufacturer’s instructions.
- Scoop the mixture out of the ice cream maker and into a freezer friendly, airtight container and place in freezer for another 2 hours.
- When your mixture is ready, scoop even balls into serving dishes and sprinkle with a bit of freshly ground pepper.
- Serve and enjoy!
