We all love a soft and slightly hot cinnamon roll. This delicious recipe is easy to make and is suitable for the whole family.
Ingredients
DOUGH:
- 1 1/2 packages dry yeast
- 3/4 cup Warm fat-free milk
- 1/4 cup Warm water
- 1/4 cup Butter, softened
- 1/4 cup Honey
- 1/2 tsp Salt
- 1 1/2 tsp Lemon juice, preferably fresh
- 1 large Egg
- 1 large Egg white
- 320g All-purpose flour
- 200g Whole-wheat flour
- Cooking spray
FILLING:
- 1/4 cup Packed brown sugar
- 1 1/2 tbsp Ground cinnamon
- 1/8 tsp Ground nutmeg
- 1/3 cup Raisins
GLAZE:
- 3/4 cup Icing sugar, sifted
- 3/4 tsp Vanilla extract
- 5 tsp Fat-free milk
Method:
DOUGH:
- In a large bowl add the yeast to the warm milk and 1/4 cup warm water.
- Wait 5 minutes until nice and foamy.
- Add the butter, honey, salt, lemon juice, egg to the egg whites and add to yeast mixture. Stir well.
- Then add 2 cups all-purpose flour and whole wheat flour to the yeast mixture. Stir until a soft dough forms.
- Turn dough out on a floured surface and knead for about 8 minutes until smooth and elastic.
- Add the remaining flour slowly to prevent dough from sticking to your fingers. This dough is quite sticky.
- Coat a resting bowl with cooking spray, place dough in bowl, cover and rest in a warm place for about 1 hour.
- When dough has risen to twice its size, knead down.
- Roll into a 30cm x 40cm rectangle.
- Coat the surface of the dough with cooking spray.
FILLING:
- In a mixing bowl, combine brown sugar, cinnamon, and nutmeg.
- Gently and evenly sprinkle the mixture over the dough, make sure to leave a clean 1cm border all around the dough.
- Press the mixture gently into the dough.
- Tightly roll up the dough rectangle, starting with the long end. There should be no air pockets.
- Cut the dough into 16 rolls.
- Place the rolls, cut side up into a coated baking tray,
- Cover and let rise until they are double their size. (About 40-50 minutes)
- Heat the oven to 190°C.
- Uncover rolls and bake for 22 minutes until lightly brown.
- Cool the rolls in the pan on a wire rack.
GLAZE:
- In a small mixing bowl add the icing sugar and vanilla.
- Add 5 tsps milk in 1 tsp intervals. Stir continuously to form a thick glaze.
- Drizzle the glaze evenly over the rolls.
- Serve and enjoy!
NOTE:
To find out if your dough has risen enough, gently press two fingers into dough. If indentation remains you know your dough is perfect. If not let it stand a bit longer.
