These delicious, old-fashioned biscuits are low in fat and a great way to spoil friends and family at tea time. This recipe yields more or less 14 biscuits.
Ingredients:
- 2 cups All-purpose flour
- 2 1/2 tsp Baking powder
- 1/2 tsp Salt
- 5 tbsp Chilled butter, cut into small pieces
- 3/4 cup Fat-free buttermilk
- 3 tbsp honey
Method:
- Preheat the oven to 200°C
- Prepare a baking tray with parchment paper.
- In a large mixing bowl, add the flour, baking powder and salt. Combine with a fork.
- Add the small cubes of butter to your flour mixture and rub it in. Your mixture should resemble breadcrumbs when fully combined.
- Chill the flour mixture for 10 minutes.
- In a smaller mixing bowl add the buttermilk and honey. Whisk until fully combined.
- Add the buttermilk mixture to your flour mixture and combine.
- When your dough is almost fully combined turn it out onto a floured surface and knead lightly. Do not over knead as this will inhibit your biscuits from rising.
- Roll dough out into a rectangle about 1 cm thick. Dust with flour and fold dough crosswise into thirds. Roll out your dough into a rectangle again, about 1 cm thick. Flour the top again and fold crosswise. Then you have to pat the dough down to about 2 cm thick.
- By using a round cookie cutter, cut 14 dough rounds out of your dough and place onto prepared baking tray.
- Bake biscuits in oven for about 12 minutes until golden.
- Remove from the oven and cool on cooling rack.
- These biscuits should be served warm.
