[Recipe] Delicious Flaky Buttermilk Biscuits

These delicious, old-fashioned biscuits are low in fat and a great way to spoil friends and family at tea time. This recipe yields more or less 14 biscuits.

Ingredients:

  • 2 cups All-purpose flour
  • 2 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 5 tbsp Chilled butter, cut into small pieces
  • 3/4 cup Fat-free buttermilk
  • 3 tbsp honey

Method:

  1. Preheat the oven to 200°C
  2. Prepare a baking tray with parchment paper.
  3. In a large mixing bowl, add the flour, baking powder and salt. Combine with a fork.
  4. Add the small cubes of butter to your flour mixture and rub it in. Your mixture should resemble breadcrumbs when fully combined.
  5. Chill the flour mixture for 10 minutes.
  6. In a smaller mixing bowl add the buttermilk and honey. Whisk until fully combined.
  7. Add the buttermilk mixture to your flour mixture and combine.
  8. When your dough is almost fully combined turn it out onto a floured surface and knead lightly. Do not over knead as this will inhibit your biscuits from rising.
  9. Roll dough out into a rectangle about 1 cm thick. Dust with flour and fold dough crosswise into thirds. Roll out your dough into a rectangle again, about 1 cm thick. Flour the top again and fold crosswise. Then you have to pat the dough down to about 2 cm thick.
  10. By using a round cookie cutter, cut 14 dough rounds out of your dough and place onto prepared baking tray.
  11. Bake biscuits in oven for about 12 minutes until golden.
  12. Remove from the oven and cool on cooling rack.
  13. These biscuits should be served warm.
