[Recipe] Balsamic & Parmesan Roasted Cauliflower

This delicious recipe only takes 35 minutes to make and serves 4. This dish is best served with red meat.


  • 8 cups Cauliflower florets, 1,5cm thick slices
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Marjoram, dried
  • 1/4 tsp Salt
  • Freshly ground pepper to taste
  • 2 tbsp Balsamic vinegar
  • 1/2 cup Parmesan cheese, finely shredded


  1. Preheat the oven to 220°C (450°F).
  2. In a large mixing bowl, add the sliced cauliflower, olive oil, marjoram, salt and pepper. Toss gently until cauliflower is evenly coated.
  3. Spread the mixture on a baking tray and roast for 15-20 minutes, until the cauliflower starts to brown.
  4. Remove from the oven and toss with vinegar and cheese. Should you find it difficult to toss in the tray, you can always place the cauliflower back in the mixing bowl.
  5. Return cauliflower, on the baking tray, to the oven and roast for a further 5-10 minutes, until cheese has browned and melted.
  6. Serve and enjoy.

NOTE: If the cauliflower is still a bit wet and soggy you can give it a few more minutes in the oven. Just keep a close eye on them so they don’t burn.
