This lovely diabetic-friendly recipe can be enjoyed as a side dish or on its own. This recipe yields 4 serving and each serving contains about 350 Calories.
Ingredients:
- 1 cup Pearl barley, uncooked quick-cooking
- 420g Black beans, rinsed and drained
- 2 cups Cherry tomatoes, halved
- 1/2 cup Green pepper, finely chopped
- 1/2 cup Diabetic friendly cheese, cur into cubes
- 1/3 cup Lemon juice
- 2 tbsp Olive oil
- 1 tsp Salt
- 3/4 cup Cilantro leaves, fresh
- 1/8 tsp Ground red pepper corns
Method:
- Follow the instructions on the barley packet and cook.
- Drain the cooked barley in a colander and rinse immediately with cold water, until the barley has cooled off completely.
- In a mixing bowl add the black beans, tomatoes, green pepper, cheese, lemon juice, olive oil, salt, cilantro and ground red pepper corns.
- Add barley to the mixing bowl and toss gently.
- Serve and enjoy!
