[Recipe] Barley and Black Bean Salad

This lovely diabetic-friendly recipe can be enjoyed as a side dish or on its own. This recipe yields 4 serving and each serving contains about 350 Calories.

Ingredients:

  • 1 cup Pearl barley, uncooked quick-cooking
  • 420g Black beans, rinsed and drained
  • 2 cups Cherry tomatoes, halved
  • 1/2 cup Green pepper, finely chopped
  • 1/2 cup Diabetic friendly cheese, cur into cubes
  • 1/3 cup Lemon juice
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 3/4 cup Cilantro leaves, fresh
  • 1/8 tsp Ground red pepper corns

Method:

  1. Follow the instructions on the barley packet and cook.
  2. Drain the cooked barley in a colander and rinse immediately with cold water, until the barley has cooled off completely.
  3. In a mixing bowl add the black beans, tomatoes, green pepper, cheese, lemon juice, olive oil, salt, cilantro and ground red pepper corns.
  4. Add barley to the mixing bowl and toss gently.
  5. Serve and enjoy!
