This delicious ketchup recipe is great for your health. Blueberry ketchup works great on burgers and for dipping chicken nuggets or french fries. This recipe makes about 3 cups of ketchup and can be either be stored in the fridge for 2 weeks of in the freezer for about 1 month.
Ingredients:
- 2 1/2 cups Blueberries, fresh
- 1 Green onion, chopped finely (about 2 Tbsp)
- 1 1/4 cups Sugar
- 1/2 cup Red wine vinegar
- 2 tbsp Ginger, finely chopped
- 1 tbsp Lime juice
- 1/4 tsp Salt
- 1/4 tsp Pepper, freshly ground
Method:
- Place the blueberries, sugar, vinegar, ginger, lime juice, salt and pepper in a large saucepan.
- Heat over a medium-heat, stirring.
- When the sugar has dissolved reduce the heat to a medium-low heat and simmer for about 20-30 minutes, until the blueberries have mostly broken down and the sauce has thickened. Stir occasionally.
- Take off heat and spoon into jars or freezer safe holders.
- Place in the fridge to chill for about 4 hours, before use or placing in the freezer.
- Serve and enjoy!
