[Recipe] Blueberry Ketchup

This delicious ketchup recipe is great for your health. Blueberry ketchup works great on burgers and for dipping chicken nuggets or french fries. This recipe makes about 3 cups of ketchup and can be either be stored in the fridge for 2 weeks of in the freezer for about 1 month.

Ingredients:

  • 2 1/2 cups Blueberries, fresh
  • 1 Green onion, chopped finely (about 2 Tbsp)
  • 1 1/4 cups Sugar
  • 1/2 cup Red wine vinegar
  • 2 tbsp Ginger, finely chopped
  • 1 tbsp Lime juice
  • 1/4 tsp Salt
  • 1/4 tsp Pepper, freshly ground

Method:

  1. Place the blueberries, sugar, vinegar, ginger, lime juice, salt and pepper in a large saucepan.
  2. Heat over a medium-heat, stirring.
  3. When the sugar has dissolved reduce the heat to a medium-low heat and simmer for about 20-30 minutes, until the blueberries have mostly broken down and the sauce has thickened. Stir occasionally.
  4. Take off heat and spoon into jars or freezer safe holders.
  5. Place in the fridge to chill for about 4 hours, before use or placing in the freezer.
  6. Serve and enjoy!
