Italian dessert are always a winner! This dairy free dessert is great for any occasion. This recipe serves about 4 and takes about 4 minutes to prepare.
Ingredients:
- 750 ml Coffee flavoured soy milk
- 6 Egg yolks
- 2/3 cups Caster sugar
- 4 Shots espresso
- Frangelico, to serve (optional)
- Biscotti, to serve (optional)
Method:
- In a saucepan, heat the soy milk until lightly boiling.
- Whisk egg and sugar until pale. Pour the heated soy milk over the egg mixture and mix. Pour the mixture back into the pan and simmer for 3-5 minutes until thick.
- Remove from heat pour into a freezer proof container. Place in freezer until the edges start to freeze.
- Remove from freezer and whisk with an electric whisk. Pour back into container and freeze again.
- Repeat this method 3 times
- Place 2 scoops of the ice cream in a glass. Pour over the espresso and Frangelico. Serve with one Biscotti biscuit.
- Serve and enjoy
Note: You can also use an ice cream maker. Follow manufacturer’s instructions.
