[Recipe] Coffee Ice Cream Affogato

Italian dessert are always a winner! This dairy free dessert is great for any occasion. This recipe serves about 4 and takes about 4 minutes to prepare.

Ingredients:

  • 750 ml Coffee flavoured soy milk
  • 6 Egg yolks
  • 2/3 cups Caster sugar
  • 4 Shots espresso
  • Frangelico, to serve (optional)
  • Biscotti, to serve (optional)

 Method:

  1. In a saucepan, heat the soy milk until lightly boiling.
  2. Whisk egg and sugar until pale. Pour the heated soy milk over the egg mixture and mix. Pour the mixture back into the pan and simmer for 3-5 minutes until thick.
  3. Remove from heat pour into a freezer proof container. Place in freezer until the edges start to freeze.
  4. Remove from freezer and whisk with an electric whisk. Pour back into container and freeze again.
  5. Repeat this method 3 times
  6. Place 2 scoops of the ice cream in a glass. Pour over the espresso and Frangelico. Serve with one Biscotti biscuit.
  7. Serve and enjoy

Note: You can also use an ice cream maker. Follow manufacturer’s instructions.
