[Recipe] Dairy Free Strawberry and Vanilla Cupcakes

We all love a good cupcake. This recipe is perfect for any occasion and works well at children parties. Their friends will never know the difference. This recipe makes about 30 cupcakes.

Ingredients:

  • 2/3 cup Dairy free Margarine
  • 2 tsp Vanilla extract
  • 1 cup caster sugar
  • 1 1/2 cups self raising flour
  • 1 Egg
  • 3/4 cup Cold water

Icing:

  • 2/3 cup Dairy free margarine
  • 2 1/2 cups Icing sugar
  • 1 tsp Strawberry essence
  • Red food colouring
  • Sprinkles for garnish

 Method:

  1. Preheat oven to 180 degrees Celsius.
  2. Prepare cupcake pan by lining holes with cupcake paper cases.
  3. Mix together margarine, vanilla extract, sugar, flour eggs and cold water in a electric mixer on low speed for about 1 minute. Increase speed and mix for a further 4 minutes.
  4. Scoop dough into cupcake paper cases and bake for about 12-15 minutes until golden brown.
  5. Cool on cooling rack

Icing:

  1. With an electric mixer, mix together margarine, icing sugar and strawberry essence until light an fluffy.
  2. Then add about 2-3 drops of food colouring and combine well.
  3. Use a piping bag and pipe icing onto cupcakes. Top with sprinkle.
  4. Serve and enjoy!
