A recipe for every home. This is a very quick and easy recipe. Taking about 22 minutes to prepare and makes about 10-12 servings. Perfect for any breakfast.
Ingredients:
- 2 cups whole wheat pastry flour
- 4 tsp baking powder
- 3⁄4 tsp salt
- 2 tbsp coconut sugar or granulated sugar of choice
- 1-1/4 cups Coconut Milk
Creamy jam topping (optional):
- 2 tbsp jam (your choice)
- 1 tbsp coconut cream
- 1⁄2 tablespoon coconut oil, softened
Method:
- Preheat oven to 220 degrees Celsius
- In a medium mixing bowl, whisk together flour, sugar, baking powder and salt.
- Gently add the coconut milk and stir until combined. A soft dough will form. Add small amounts of extra flour if dough is too wet.
- Roll out dough on a floured surface, please be careful as over handling can make cookies dense.
- Press out desired cookie shapes and place on baking tray.
- Bake for about 10-15 minutes. Cookies become light brown when ready.
Creamy jam topping:
- Whisk together jam, coconut cream and softened coconut oil (not melted) until nice and smooth. Chill afterward to thicken.
- Serve and enjoy!
