[Recipe] Dairy free whole wheat biscuits

A recipe for every home. This is a very quick and easy recipe. Taking about 22 minutes to prepare and makes about 10-12 servings. Perfect for any breakfast.

 Ingredients:

  • 2 cups whole wheat pastry flour
  • 4 tsp baking powder
  • 3⁄4 tsp salt
  • 2 tbsp coconut sugar or granulated sugar of choice
  • 1-1/4 cups Coconut Milk

Creamy jam topping (optional):

  • 2 tbsp jam (your choice)
  • 1 tbsp coconut cream
  • 1⁄2 tablespoon coconut oil, softened

Method:

  1. Preheat oven to 220 degrees Celsius
  2. In a medium mixing bowl, whisk together flour, sugar, baking powder and salt.
  3. Gently add the coconut milk and stir until combined. A soft dough will form. Add small amounts of extra flour if dough is too wet.
  4. Roll out dough on a floured surface, please be careful as over handling can make cookies dense.
  5. Press out desired cookie shapes and place on baking tray.
  6. Bake for about 10-15 minutes. Cookies become light brown when ready.

Creamy jam topping:

  1. Whisk together jam, coconut cream and softened coconut oil (not melted) until nice and smooth. Chill afterward to thicken.
  2. Serve and enjoy!
