Ingredients:
- 300g Macaroni pasta
- Cooking spray
- 40g Butter
- 2 tbsp Plain flour
- Pepper
- 2 cups Milk
- 3/4 cup Cheddar cheese
- 425g can Tuna in springwater, drained, flake
Method:
- Preheat the oven to 200ºC/ 400ºF.
- In a medium saucepan, add water with salt and a drizzle of olive oil. Add the uncooked macaroni and cook according to package instruction.
- Prepare an oven proof dish with cooking spray.
- In a saucepan melt your butter and add some pepper.
- Using a fork add the flour and stir until the butter and flour forms a dough-like substance.
- Gradually pour in your milk and whisk. Cook on a medium heat for about 5 minutes, whisking continuously. Do not over whisk as this can inhibit the thickening process.
- When the mixture is thick enough to your liking, remove from the heat and stir in 1/4 cup of the cheese with a wooden spoon. Set aside.
- Drain the pasta and reserve 1/4 cup of the cooking liquid.
- Add the cooking liquid, tuna and cheese mixture to the pasta and combine well.
- Spoon mixture into prepared baking dish and top with the rest of the cheese.
- Bake in the oven for 12-15 minutes or until golden brown.
