This delicious cheesecake recipe serves 8. Each serving contains about 80 calories.


  • 2 tbs Cold water
  • 1 Envelope unflavored gelatin
  • 2 tbsp Lemon juice
  • 1/2 cup Skim milk, heated almost to boiling
  • 2 egg whites
  • 1/4 cup Sugar
  • 1 tsp Vanilla
  • 2 cups Cottage cheese, low-fat
  • Lemon zest for garnish


  1. In a blender, add the water, gelatin and lemon juice and blend on low speed for 1-2 minutes. Until the gelatin has softened.
  2. Slowly add hot milk while blending until gelatin is fully dissolved.
  3. Add the egg substitute, sugar, vanilla and cheese to the blender. Blend on a high speed until combined.
  4. Pour mixture into pie plate and refrigerate for 2-3 hours.
  5. Garnish with lemon zest.
  6. Serve and enjoy!
