This is a truly delicious recipe, perfect for those lazy nights or as a vibrant lunch. These patties are best served with a salad, accompanied by a little bit of low-fat sour cream.
Ingredients:
- 2 cups Mashed potatoes
- 2 tbsp Fresh chives or green onions, chopped
- 1 large Egg white
- 1/4 cup Seasoned breadcrumbs, divided
- 2 tbsp Parmesan, grated
- 2 tsp Olive oil, divided
Method:
- In a large mixing bowl. Combine the mashed potatoes, chives, egg white and 2tbsp bread crumbs.
- Divide the mixture into 8 equal portions and shape into patties. Set aside.
- In a small mixing bowl, combine 2 tbsp breadcrumbs and the parmesan cheese. Place mixture onto a plate and set aside.
- Heat a large non-stick pan and add 1 tsp olive oil.
- Coat the patties with the parmesan mixture and place in pan. Cook for about 3-5 minutes on each side until golden brown.
- Serve and enjoy.
