This recipe is easy to make and serves 6. Mac & Cheese is one of those recipes that is almost fool proof, be adventurous and play around with the ingredients.
Ingredients:
- Cooking spray
- 1 tbsp Butter, unsalted
- 2 tbsp All-purpose flour
- 2 cups Milk
- 170g Cheddar cheese, shredded
- ¼ tsp Salt
- ¼ tsp Black pepper, freshly ground
- 280g Broccoli, cut into smaller pieces
- 230g Macaroni, cooked
- ¼ cup Breadcrumbs
- 1 tbsp Parmesan cheese, grated
Method:
- Preheat the oven to 180ºC / 350ºF.
- Prepare you baking dish with cooking spray. Make sure the whole surface is covered with cooking spray, but don’t overdo it.
- Place your macaroni in a pot with water and salt and cook according to the instructions on the packaging.
- In a saucepan melt your butter and add some of the pepper.
- Using a fork add the flour and stir until the butter and flour forms a dough-like substance.
- Gradually pour in your milk and whisk. Cook on a medium heat for about 5 minutes, whisking continuously. Do not over whisk as this can inhibit the thickening process.
- When the mixture is thick enough to your liking, remove from the heat and add the cheese, salt and remainder of the pepper. Stir with a wooden spoon until all the cheese has melted.
- Transfer your sauce, cooked macaroni and broccoli to your prepared baking dish.
- Top with breadcrumbs and parmesan and place in the oven for 25-30 minutes or until golden on top.
NOTE: This dish can be served on its own or with a light salad.
