This delicious recipe is easy to make. You will need an ice cream maker.
Ingredients:
- 1 1/2 tsp unflavoured Gelatin
- 1 tbsp Water
- 3 cups low-fat Milk, divided
- 3 large Egg yolks
- 395g Sweetened condensed milk
- 1 Vanilla pod
- 3/4 cup fresh or frozen strawberries, chopped
- 1/4 cup mini chocolate chips or cocoa beans
Method:
- In a small bowl add the water and pour the gelatine over. Set aside. Stir mixture once or twice while you’re making the ice cream base.
- In a large saucepan, on a medium heat, heat 1 1/2 cups of milk.
- Cut the vanilla pod lengthwise and scrape out seeds. Add seeds and vanilla pod into the milk.
- Heat the vanilla, milk mixture until its starts to steam. Remove from heat.
- In a mixing bowl combine the egg yolks and condensed milk. When fully combined add to hot milk mixture. Combine by using a whisk.
- Place mixture back onto a medium heat, for 3-5 minutes. DON’T boil, as the mixture will curdle.
- Remove from heat.
- Strain custard through a sieve into a large mixing bowl.
- Add the softened gelatine and whisk until fully combined.
- Whisk in the last 1 1/2 cups of milk.
- Cover and place in the fridge to cool for about 2 hours. DON’T put the mixture into the freezer!
- Remove from fridge and whisk the mixture before pouring it into the ice cream maker.
- Follow the manufacturer’s instructions.
- During the last 5 minutes, add the strawberries & choc chips or cocoa beans.
- Serve and enjoy!
Notes:
- You can store your ice-cream in the freezer for up to 1 week.
