This delicious Hungarian inspired recipe is easy to make. You will need about 15 minutes prep time and about 1 hour cook time. The recipe yields 2-3 servings. Each sering contains about 345 calories.
Ingredients:
- 1 tbsp Oil (Olive oil or rapeseed oil)
- 1 large Onion, halved and sliced
- 3 Garlic cloves, sliced
- 200g Extra lean stewing beef, finely diced
- 1 tsp Caraway seeds (available at Woolworths or local health shops)
- 2 tsp Smoked paprika
- 400g can chopped Tomatoes
- 600ml Beef stock
- 1 medium Sweet potato, peeled and diced
- 1 Green pepper, deseeded and diced
For the topping:
- 150g Plain yogurt
- Good handful parsley, chopped
Method:
- In a large pot, heat the oil on a medium heat. Add the onion and garlic and fry for about 5 minutes or until slightly brown.
- Add the beef. Fry on a high heat until brown.
- Add the caraway and paprika. Stir.
- Add the can of chopped tomatoes and the beef stock.
- Cover the pot and cook on a low heat for about 30 minutes.
- Stir in the sweet potato and green pepper.
- Cover and cook for a further 20 minutes or until tender.
- Remove from heat and set aside for 5 minutes before serving.
- Equally divide your soup between bowls. Add one spoonful of yogurt to each serving and top with parsley.
Note: If your soup is too hot when adding the yogurt, the heat will destroy the good bacteria in the yogurt.
