This delicious recipe takes about 20 minutes to prepare. You can serve 4 people and each serving contains about 215 Calories.
Ingredients:
- 2 cups Grape tomatoes, halved
- 2 tbsp Capers, drained
- 2 tbsp Lemon juice
- 2 tsp Olive oil
- 1 tbsp Fresh basil, chopped
- 1/4 tsp Salt
- 1/8 tsp Red pepper, crushed
- 4 x 150g Snapper fillets
- Cooking spray
- 1 tsp Paprika
- 2 tbsp Fresh parsley, chopped
- 1 Lemon, cut into 4 wedges
Method:
- Heat the oven to 220ºC.
- In a mixing bowl add the tomatoes, capers, lemon juice, olive oil and basil. Toss gently and set aside.
- Cover a broiler pan with foil and coat with cooking spray.
- Sprinkle paprika over snapper and coat with cooking spray.
- Bake in the oven for 10 minutes.
- Take snapper out of the oven and top with tomato mixture, bake for a further 5 minutes.
- Sprinkle fish with parsley.
- Serve with Lemon wedges.
