[Recipe] Diabetic-friendly Snapper topped with Tomato & Capers

This delicious recipe takes about 20 minutes to prepare. You can serve 4 people and each serving contains about 215 Calories.

Ingredients:

  • 2 cups Grape tomatoes, halved
  • 2 tbsp Capers, drained
  • 2 tbsp Lemon juice
  • 2 tsp Olive oil
  • 1 tbsp Fresh basil, chopped
  • 1/4 tsp Salt
  • 1/8 tsp Red pepper, crushed
  • 4 x 150g Snapper fillets
  • Cooking spray
  • 1 tsp Paprika
  • 2 tbsp Fresh parsley,  chopped
  • 1 Lemon, cut into 4 wedges

Method:

  1. Heat the oven to 220ºC.
  2. In a mixing bowl add the tomatoes, capers, lemon juice, olive oil and basil. Toss gently and set aside.
  3. Cover a broiler pan with foil and coat with cooking spray.
  4. Sprinkle paprika over snapper and coat with cooking spray.
  5. Bake in the oven for 10 minutes.
  6. Take snapper out of the oven and top with tomato mixture, bake for a further 5 minutes.
  7. Sprinkle fish with parsley.
  8. Serve with Lemon wedges.
  9. Enjoy!
