This delicious recipe takes about 40 minutes to prepare and serves 4.
Ingredients:
- 2 tbsp Olive oil
- 1 large Cauliflower, cut crossways into four 1.5cm-thick pieces
- 50g Green olives, finely chopped
- 60ml Extra virgin olive oil
- 1 tbsp Lemon juice
- 1 tbsp Baby capers
- 1 tbsp Fresh parsley, chopped
- 2 tsp Fresh oregano, chopped
- 1/4 tsp Caster sugar
Method:
- Preheat the oven to 180ºC.
- Line 2 baking trays with foil.
- Place a non-stick frying pan over a medium heat and add 2 tbsp of olive oil.
- Place 1 cut cauliflower piece into the pan and cook. Turn the cauliflower steak ever 4-5 minutes until golden. Remove from heat and place in baking tray.
- Repeat process with the rest of the cauliflower.
- When finished, place trays with cauliflower into the oven and roast for about 12-15 minutes or until nice and tender.
- While waiting, combine the olives, extra virgin olive oil, lemon juice, capers, parsley, oregano and sugar in a small mixing bowl.
- Mix and season with salt and pepper to your liking.
- Remove cauliflower from oven and place on serving plates or a platter.
- Top cauliflower steaks with olive mixture.
- Serve and enjoy.
NOTE: You can serve these steaks on their own or you can add them as a side dish. Be creative.
