[Recipe] Italian Style Cauliflower Steaks

This delicious recipe takes about 40 minutes to prepare and serves 4.

Ingredients:

  • 2 tbsp Olive oil
  • 1 large Cauliflower, cut crossways into four 1.5cm-thick pieces
  • 50g Green olives, finely chopped
  • 60ml Extra virgin olive oil
  • 1 tbsp Lemon juice
  • 1 tbsp Baby capers
  • 1 tbsp Fresh parsley, chopped
  • 2 tsp Fresh oregano, chopped
  • 1/4 tsp Caster sugar

Method:

  1. Preheat the oven to 180ºC.
  2. Line 2 baking trays with foil.
  3. Place a non-stick frying pan over a medium heat and add 2 tbsp of olive oil.
  4. Place 1 cut cauliflower piece into the pan and cook. Turn the cauliflower steak ever 4-5 minutes until golden. Remove from heat and place in baking tray.
  5. Repeat process with the rest of the cauliflower.
  6. When finished, place trays with cauliflower into the oven and roast for about 12-15 minutes or until nice and tender.
  7. While waiting, combine the olives, extra virgin olive oil, lemon juice, capers, parsley, oregano and sugar in a small mixing bowl.
  8. Mix and season with salt and pepper to your liking.
  9. Remove cauliflower from oven and place on serving plates or a platter.
  10. Top cauliflower steaks with olive mixture.
  11. Serve and enjoy.

NOTE: You can serve these steaks on their own or you can add them as a side dish. Be creative.
