Ingredients:
- Olive oil
- 2 cups Mushrooms sliced
- 2 small Zucchini, sliced
- 1 large Red pepper, chopped
- Black beans
- Sweet corn
- Lettuce
- Cheese, grated for garnish
- Salsa, your choice
- 4 Ready made Tostadas
Method:
- In a skillet add the olive oil and heat on a medium-high heat.
- Add the mushrooms, zucchini and pepper to the pan and sauté for about 3-5 minutes.
- On each tostada add a small amount of black beans and top with sautéed mixture. Finish with some salsa, sweet corn, lettuce an a sprinkle of grated cheese.
- Serve and enjoy!
