[Recipe] Simple Veggie Tostadas

This delicious recipe takes about 30 minutes to make and 1 Tostada contains about 215 calories.

Ingredients:

  • Olive oil
  • 2 cups Mushrooms sliced
  • 2 small Zucchini, sliced
  • 1 large Red pepper, chopped
  • Black beans
  • Sweet corn
  • Lettuce
  • Cheese, grated for garnish
  • Salsa, your choice
  • 4 Ready made Tostadas

Method:

  1. In a skillet add the olive oil and heat on a medium-high heat.
  2. Add the mushrooms, zucchini and pepper to the pan and sauté for about 3-5 minutes.
  3. On each tostada add a small amount of black beans and top with sautéed mixture. Finish with some salsa, sweet corn, lettuce an a sprinkle of grated cheese.
  4. Serve and enjoy!
