How about having breakfast for lunch? We all love a good breakfast, so why can’t we have it twice. This delicious lunchbox idea is a great idea for young and old.
This lunchbox contains:
- Hardboiled egg
- Pancakes
- Strawberries
- Orange/ nectarine wedges
- Drinking yogurt/ normal yogurt
How to make Buttermilk Pancakes:
Yields more or less 18; 6cm diameter pancakes.
Ingredients:
- 2 1/2 cups Flour
- 2 tbsp Sugar
- 1 1/2 tsp Salt
- 1 tsp Baking powder
- 1 tsp Baking soda
- 2 large Eggs, separated
- 2 cups Buttermilk
- 1/2 cup Milk
- 10 tbsp Unsalted butter, melted and cooled
- Canola oil for frying
Method:
- Preheat the oven to 110°C (225°F).
- Place a cooling rack inside a baking pan and place in oven.
- In a large mixing bowl combine the flour, sugar, salt, baking powder, and baking soda.
- Separate your eggs into two different mixing bowls.
- Whisk the egg yolks, buttermilk and milk together.
- Add the cooled unsalted butter and whisk until fully combined.
- Add the egg and buttermilk mixture to the flour mixture. Stir with a wooden spoon until just combined.
- Add the egg whites and combine until a thick batter forms.
- Set aside for 5 minutes.
- Over a medium-high heat, heat a large skillet. When the pan is nice and hot add about 1/2 tsp of Canola oil.
- Heat for about 20-30 seconds.
- Lower the heat to medium-low.
- Spoon the dough into your pan. Make sure not to place too many pancakes in one pan.
- When the surface of the pancake start to make bubbles, flip them over by using a spatula. This will be between 2 – 2.5 minutes.
- Cook on the other side until golden brown.
- Place pancakes on cooling rack in the oven to keep warm.
- Repeat process with the rest of the batter.
- Serve hot with honey.
Note:
- To make your own buttermilk add 2 tbsp of lemon juice to 2 cups of milk.
- If you do not like buttermilk, you can also use plain yogurt. Use 2/3 cup yogurt and 1/3 cup milk. Combine.
