This delicious summer recipe will work for the whole family. Enjoy it as a lunch or even a dinner, feel free to experiment with different combinations and flavours. This recipe serves 4 and each serving contains about 370 Calories.
Ingredients:
- 2 tsp Canola oil
- 1 tsp Ground cumin
- 1/4 tsp Kosher salt
- 1/4 tsp Black pepper
- 300g Chicken breasts
- 1 Red onion, chopped
- 1 cup Corn kernels
- 1 cup Zucchini, chopped
- 1/2 cup Salsa verde
- 3 tbsp Fresh cilantro, chopped
- 4 Fat-free flour tortillas
- Cooking spray
- 85g Cheese, shredded
Method:
- Preheat the oven to about 180 degrees Celsius.
- In a mixing bowl combine the cumin, salt and pepper.
- Add oil to a pan and heat over a medium-high heat.
- Coat the chicken with your spice mixture and sauté for 3 minutes.
- Add the onion, corn, and zucchini to the pan and sauté for a further 2 minutes or until chicken is done.
- Add the salsa and 2 tbsp Cilantro to the pan and stir. Cook for about 2 minutes until most of the liquid is gone.
- Coat the tortillas with cooking spray and arrange on a baking tray and place in oven for about 3 minutes, until brown.
- Remove the tortillas from the oven and scoop about 3/4 cup of the chicken mixture on top of the tortilla. Spread evenly. Sprinkle with cheese and bake in the oven for an additional 2 minutes. The cheese should be nicely melted.
- Top with remaining cilantro.
- Serve immediately. Enjoy!
