This delicious recipe works great as a side dish or as an on-its-own lunch. This recipe serves 6; 2/3 cup servings. Each serving contains about 90 calories.
Ingredients:
- 1 tbsp Canola oil
- 4 Green onions, chopped
- 1 Garlic clove, minced
- 1 cup Green beans, sliced
- 1 Red pepper, chopped
- 1 Jalapeño pepper, seeded & finely chopped
- 1 cup fresh corn kernels
- 420g Black beans, drained & rinsed
- 1/3 cup Fresh cilantro, minced
- 1/8 tsp Salt
- 1/8 tsp Black pepper, freshly ground
Method:
- Heat the oil in a large frying pan over a medium to high heat.
- Add the onions and garlic. Sauté for about 1 minute.
- Add the green beans and sauté for another 3 minutes.
- Then add the red pepper and jalapeño and cook for about 5 minutes until soft.
- Stir in the beans and cook for a further 2 minutes.
- Season with salt & pepper and top with cilantro.
- Serve and enjoy!
