[Recipe] Corn & Summer Vegetable Salad

This delicious recipe works great as a side dish or as an on-its-own lunch. This recipe serves 6; 2/3 cup servings. Each serving contains about 90 calories.

Ingredients:

  • 1 tbsp Canola oil
  • 4 Green onions, chopped
  • 1 Garlic clove, minced
  • 1 cup Green beans, sliced
  • 1 Red pepper, chopped
  • 1 Jalapeño pepper, seeded & finely chopped
  • 1 cup fresh corn kernels
  • 420g Black beans, drained & rinsed
  • 1/3 cup Fresh cilantro, minced
  • 1/8 tsp Salt
  • 1/8 tsp Black pepper, freshly ground

Method:

  1. Heat the oil in a large frying pan over a medium to high heat.
  2. Add the onions and garlic. Sauté for about 1 minute.
  3. Add the green beans and sauté for another 3 minutes.
  4. Then add the red pepper and jalapeño and cook for about 5 minutes until soft.
  5. Stir in the beans and cook for a further 2 minutes.
  6. Season with salt & pepper and top with cilantro.
  7. Serve and enjoy!
