[Recipe] Quinoa Salad

We all enjoy a salad every now and again. This salad is great when combined with any type of meal and can also be enjoyed on its own. This recipe serves 4.

Ingredients:

Dressing:

  • 1/4 cup Cashew nuts
  • 1/8 cup Pine nuts
  • 2 tsp Miso paste
  • 1/4 tsp Honey
  • 1/2 cup Water
  • 3 tbsp Lemon juice
  • 2 Cloves garlic, minced
  • 1 tbsp Lemon zest
  • 1/4 tsp Red pepper
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Salad:

  • 1 cup Quinoa, uncooked
  • 1/4 cup Cranberries, dried
  • 2 Spring onions
  • 2 cups spinach

Method:

  1. Cook your quinoa by following the instructions on the packet.
  2. In a blender add the cashew nuts, pine nuts, miso paste, honey, water, lemon juice, garlic, lemon zest, red pepper, salt and pepper and blend until smooth. If your dressing is a bit thick, just add more water.
  3. After your quinoa has been cooked place the quinoa in a large mixing bowl. Then add the cranberries, onions and spinach. Toss gently.
  4. Pour over your dressing, toss gently.
  5. Serve and enjoy!
