This delicious summer recipe can be combined with biscuits or even as a topping for your morning pancakes. Rather use fresh berries as frozen berries do not have the same kick in flavour. This recipe yields 4 servings and each serving contains about 200 calories.
Ingredients:
- 2/3 cup Blueberries
- 2/3 cup Blackberries
- 1/2 cup Water
- 1/4 cup Sugar
- 2 tbsp Fresh lemon juice
- 1 tbsp Butter
- 2 cups Plain 2% reduced-fat Greek yogurt
Method:
- Add the blueberries, blackberries, water, sugar and lemon juice to a saucepan and bring to the boil.
- Reduce heat and gently simmer for 10 minutes or until the sauce has thickened.
- When the sauce is nice and thick, stir in the butter
- Each serving will consist of 1/2 cup yogurt and 1/4 cup of sauce.
- Do not take too long before serving as the yogurt will start to thin due to the heat of the sauce.
