[Recipe] Boost your energy Granola

Having enough fiber in your diet is very important.  Granola has numerous health benefits and can be enjoyed as a cereal, light snack or as bars.

Each serving contains 196 calories, 4.1g Protein, 32.5g Carbohydrates, 0.0mg Cholesterol, 3.5g Fiber, 1.5mg Iron, 5mg Sodium and 38mg Calcium.

Ingredients:

  • 2 cups Original oats
  • 1/3 cup Flaxseed, ground
  • 1/4 cup Walnuts, chopped
  • 1/4 cup Almonds, chopped
  • 2 tsp Cinnamon, grounded
  • 1/3 cup Orange juice
  • 1/3 cup Honey
  • 1/4 cup Packed brown sugar
  • 2 tsp Canola oil
  • 1 tsp Vanilla extract
  • Cooking spray
  • 1/3 cup Dried cranberries

Method:

  1. Preheat oven to 150°C. Prepare a shallow baking tray with a thin layer of cook and spray.
  2. In a medium mixing bowl combine the oats, flaxseeds, walnuts, almonds and cinnamon. Combine well.
  3. In a saucepan, combine the juice, honey and brown sugar. Heat over a medium heat until all the sugar has been dissolved. Stir continuously.
  4. Remove form the heat and add the canola oil and vanilla essence, mix well until all the granola has been coated with this lush honey mixture.
  5. Spread mixture in your prepared banking tray and bake for about 10 minutes. Stir the mixture then bake for a further 10-15 minutes until nice and golden brown.
  6. Pour baked granola into a bowl and mix in the dried berries. Set aside and cool completely.
  7. When the granola has completely cooled.
  8. Serve and enjoy!

Note: Store the granola in an air tight container in a cool, dark place. This granola can keep for about a week.
