Quinoa is not only extremely healthy but is also very delicious. This recipe makes 4 servings.
Ingredients:
- 1 1/2 cups Quinoa, uncooked
- 1 tbsp Honey
- 1/3 cup Cilantro, fresh and finely chopped
- 1/3 cup Honey roasted peanuts
- Juice of 1 Orange
- 2 tsp Orange zest
- 2 Scallions, thinly sliced
- 1/4 tsp Sea salt
- 1/4 tsp Pepper, freshly ground
Method:
- Cook the Quinoa according to the packet instructions.
- Place Quinoa in a large mixing bowl and add the honey. Toss gently until fully combined. Cover and set mixing bowl aside for about 10 minutes.
- In another mixing bowl add the cilantro, peanuts, juice, zest, scallions, salt and pepper. Combine well.
- Combine the two mixtures and mix.
- Serve and enjoy!
NOTE: This recipe can be served hot or cold.
