[Recipe] Honey Quinoa

Quinoa is not only extremely healthy but is also very delicious. This recipe makes 4 servings.

Ingredients:

  • 1 1/2 cups Quinoa, uncooked
  • 1 tbsp Honey
  • 1/3 cup Cilantro, fresh and finely chopped
  • 1/3 cup Honey roasted peanuts
  • Juice of 1 Orange
  • 2 tsp Orange zest
  • 2 Scallions, thinly sliced
  • 1/4 tsp Sea salt
  • 1/4 tsp Pepper, freshly ground

Method:

  1. Cook the Quinoa according to the packet instructions.
  2. Place Quinoa in a large mixing bowl and add the honey. Toss gently until fully combined. Cover and set mixing bowl aside for about 10 minutes.
  3. In another mixing bowl add the cilantro, peanuts, juice, zest, scallions, salt and pepper. Combine well.
  4. Combine the two mixtures and mix.
  5. Serve and enjoy!

NOTE: This recipe can be served hot or cold.
