A delicious Diabetic-friendly cookie recipe with a sweet strawberry jam centre. This recipes makes about 20 sandwiches and each cookie contains about 97 calories.
Ingredients:
- 1/4 cup Margarine, softened
- 1/4 cup Peanut butter, no sugar added
- 1/2 cup Calorie-free sweetener
- 1/4 cup Sugar
- 2 large Egg whites
- 1 tsp Vanilla extract
- 1 3/4 cups Flour
- 1 tsp Baking soda
- 1/8 tsp Salt
- Cooking & spray
- 3/4 cup Strawberry jam, low-sugar
Method:
- Preheat the oven to 180° Celsius.
- In a mixing bowl, combine the margarine and peanut butter. Use an electric whisk.
- When the mixture is nice and creamy, start adding the sweetener and sugar. Whisk well.
- Add the egg whites and vanilla essence, whisk until fully combined.
- In a separate mixing bowl combine the flour, baking soda, and salt.
- Then, add the dry ingredients in sacraments to you peanut butter mixture, mix until fully combined. Remember not to over mix.
- Shape the dough into 40; 2,5cm balls. Place balls on a coated baking sheet and flatten with the bottom of a glass, until they are about 5cm in diameter.
- Bake for about 8 minutes until golden.
- Place the cookies on a cooling rack.
- When the cookies have completely cooled down spread a small amount of strawberry jam on one side and top with another cookie.
NOTE: Feel free to experiment with different types of low-sugar jams.
