[Recipe] Peanut Butter & Jam Sandwich Cookies

A delicious Diabetic-friendly cookie recipe with a sweet strawberry jam centre. This recipes makes about 20 sandwiches and each cookie contains about 97 calories.

Ingredients:

  • 1/4 cup Margarine, softened
  • 1/4 cup Peanut butter, no sugar added
  • 1/2 cup Calorie-free sweetener
  • 1/4 cup Sugar
  • 2 large Egg whites
  • 1 tsp Vanilla extract
  • 1 3/4 cups Flour
  • 1 tsp Baking soda
  • 1/8 tsp Salt
  • Cooking & spray
  • 3/4 cup Strawberry jam, low-sugar

Method:

  1. Preheat the oven to 180° Celsius.
  2. In a mixing bowl, combine the margarine and peanut butter. Use an electric whisk.
  3. When the mixture is nice and creamy, start adding the sweetener and sugar. Whisk well.
  4. Add the egg whites and vanilla essence, whisk until fully combined.
  5. In a separate mixing bowl combine the flour, baking soda, and salt.
  6. Then, add the dry ingredients in sacraments to you peanut butter mixture, mix until fully combined. Remember not to over mix.
  7. Shape the dough into 40; 2,5cm balls. Place balls on a coated baking sheet and flatten with the bottom of a glass, until they are about 5cm in diameter.
  8. Bake for about 8 minutes until golden.
  9. Place the cookies on a cooling rack.
  10. When the cookies have completely cooled down spread a small amount of strawberry jam on one side and top with another cookie.

NOTE: Feel free to experiment with different types of low-sugar jams.
