No personal cookbook is complete without a good spicy soup recipe. This recipe is easy to make. You’ll need 20 minutes prep time and 25 minutes for cooking. This recipe yields 4 serving and each serving contains about 535 calories.
Ingredients:
- 2 tbsp Curry paste
- 1 onion, chopped
- 2 carrots, grated
- 140g Red lentils
- 1litre hot Vegetable stock
- Stick blender
For the curry rolls:
- Cooking spray
- 500g pack bread mix
- 1 tbsp Curry paste
Method:
- Preheat the oven to 220C/200C fan/gas 7.
- Prepare a baking sheet with cooking spray
- To prepare the rolls. Follow the instructions on the bread-mix packet. Feel free to use other recipes, but stick to a basic bread dough recipe.
- Roll out the dough to a 30cm x 40cm rectangle.
- Spread with 1tbsp curry paste. Make sure to cover the whole area.
- Start at the 40cm edge and roll up the dough into a scroll.
- Cut the dough into 8 slices.
- Place on the prepared baking sheet.
- Place in the oven and bake for 20-25 minutes or until golden brown.
- In a pot. Add the curry paste and onions and fry for about 2 minutes to release the fragrance.
- Add the carrots and lentils and mix. Make sure everything is coated with the curry paste.
- Cook for 2 minutes.
- Add the stock and simmer on a low heat for 20 minutes.
- When the lentils are tender. Remove pot from heat.
- Whizz the mixture with a stick blender, until smooth.
- Divide the soup evenly and serve with the curry rolls.
- Enjoy!
