[Recipe] Summer Crab Salad with a Lemon & Basil Dressing

This delicious recipe will work great this summer. Combine it with a BBQ or a roast lamb. This recipe makes 4 large servings.

Ingredients:

  • 1 tbsp Lemon rind, grated
  • 5 tbsp Lemon juice, divided
  • 1 tbsp Extra virgin olive oil
  • 1 tsp Honey
  • 1/2 tsp Dijon mustard
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper, freshly ground
  • 1 cup Corn kernels
  • 1/4 cup Basil leaves, thinly sliced
  • 1/4 cup Red bell pepper, chopped
  • 2 tbsp Red onion, finely chopped
  • 500g Crabmeat, shell pieces removed
  • 8 slices Large tomato
  • 2 cups Cherry tomatoes, halved

Method:

  1. In a mixing bowl combine the Lemon rind, Lemon juice, olive oil, honey, mustard salt and pepper. Lightly whisk until fully combined.
  2. Reserve 1 1/2 tbsp of the juice mixture in a separate bowl.
  3. In the main juice bowl add the corn, basil, red pepper, onion and crab and toss gently until the juice has coated the whole salad.
  4. Top with tomatoes and sprinkle with the last bit of dressing.

NOTE: Feel free to add other ingredients like apple, avocado, carrot or cucumber.
