This delicious recipe will work great this summer. Combine it with a BBQ or a roast lamb. This recipe makes 4 large servings.
Ingredients:
- 1 tbsp Lemon rind, grated
- 5 tbsp Lemon juice, divided
- 1 tbsp Extra virgin olive oil
- 1 tsp Honey
- 1/2 tsp Dijon mustard
- 1/4 tsp Salt
- 1/8 tsp Black pepper, freshly ground
- 1 cup Corn kernels
- 1/4 cup Basil leaves, thinly sliced
- 1/4 cup Red bell pepper, chopped
- 2 tbsp Red onion, finely chopped
- 500g Crabmeat, shell pieces removed
- 8 slices Large tomato
- 2 cups Cherry tomatoes, halved
Method:
- In a mixing bowl combine the Lemon rind, Lemon juice, olive oil, honey, mustard salt and pepper. Lightly whisk until fully combined.
- Reserve 1 1/2 tbsp of the juice mixture in a separate bowl.
- In the main juice bowl add the corn, basil, red pepper, onion and crab and toss gently until the juice has coated the whole salad.
- Top with tomatoes and sprinkle with the last bit of dressing.
NOTE: Feel free to add other ingredients like apple, avocado, carrot or cucumber.
