[Recipe] Eye Friendly Gazpacho

This delicious recipe is high in lutein, zeaxanthin, beta-carotene and Vitamin E, all nutrients essential for good eye health. The recipes yields about 6 cups of cold soup and works well as a starter or a light lunch.

Ingredients:

  • 2 Orange peppers, seeds removed
  • 900g Orange tomatoes, cut in half
  • 1/2 small Sweet brown onion, chopped
  • 1 cup Carrot juice, preferably fresh
  • 1 Garlic clove
  • 4 tbsp Extra virgin olive oil
  • 2 tsp Sherry vinegar
  • Salt and Pepper to taste
  • For garnish – a drizzle of cream, chopped hardboiled eggs or your favourite herbs.

Method:

  1. Add the peppers, tomatoes, onion and carrot juice to a blender and blend. A puree will form.
  2. While the blender is still blending add the vinegar and then the olive oil. Turn blender off.
  3. Season to taste and mix.
  4. Pour mixture into a jug and chill in the fridge for 30-60 minutes.
  5. You can serve the soup in glases, mugs or bowls. Garnish with the chopped egg.
  6. Serve and enjoy!
