This delicious NO-CHURN ice-cream recipe was featured in Nigella Lawson’s – Nigella Express Cook Book. This recipe is one of my favourites..! This recipe yields 6 servings.
Ingredients:
- 125ml Lime juice
- 2 tbsp Tequila
- 3 tbsp Cointreau (or triple sec)
- 150 grams Icing sugar
- 500ml Double cream
Method:
- In a large mixing bowl. Combine the lime juice, tequila and cointreau.
- Stir in the icing sugar. Make sure everything is dissolved.
- Add the cream. Slowly whisk the mixture until thick and smooth. Do not over whip. This mixture should not be stiff.
- Pour the mixture into an airtight, freezer friendly container and freeze overnight.
Note:
The ice-cream will not set stiff, but it should hold its form. Caution: Ice-cream melts quickly so don’t hesitate, dig in..!
