[Recipe] No-churn Margarita Ice-cream

This delicious NO-CHURN ice-cream recipe was featured in Nigella Lawson’s – Nigella Express Cook Book. This recipe is one of my favourites..! This recipe yields 6 servings.


  • 125ml Lime juice
  • 2 tbsp Tequila
  • 3 tbsp Cointreau (or triple sec)
  • 150 grams Icing sugar
  • 500ml Double cream


  1. In a large mixing bowl. Combine the lime juice, tequila and cointreau.
  2. Stir in the icing sugar. Make sure everything is dissolved.
  3. Add the cream. Slowly whisk the mixture until thick and smooth. Do not over whip. This mixture should not be stiff.
  4. Pour the mixture into an airtight, freezer friendly container and freeze overnight.


The ice-cream will not set stiff, but it should hold its form. Caution: Ice-cream melts quickly so don’t hesitate, dig in..!
