[Recipe] Strawberry & Basil Ice-cream

This delicious recipe is easy to make and yields about 1 litre of ice-cream. Remember to make ice-cream in advance as it will take at least 6 hours to serving time.


  • 400ml sweetened Condensed milk
  • 150ml Evaporated milk
  • 1 1/2 cups Whole milk
  • 2 tbsp Sugar
  • 1/8 tsp Salt
  • 450g fresh Strawberries, coarsely chopped
  • 2 tbsp fresh Basil, chopped
  • 2 tbsp fresh Lemon juice


  1. In a mixing bowl, whisk together the condensed milk, evaporated milk, whole milk, sugar and salt.
  2. Cover and chill for about 2 hours.
  3. In a blender. Add the strawberries, basil and lemon juice. Pulse until the mixture is smooth.
  4. Pour the strawberry mixture into the chilled milk mixture. Stir until combined.
  5. Pour the mixture into an ice-cream maker. Follow the manufacturer’s instructions.
  6. When ready. Remove the container from the ice-cream maker. Place in freezer for 30 minutes.
  7. Transfer the mixture into an airtight, freezer friendly container and freeze for 3-4 hours, until firm.
  8. Serve and enjoy!
